2023 Connected/ Breathe-In/ Becoming Probiotic/ Becoming Plastic (Scoby Sculpture), Wander_Land – a Royal Society of Sculptors group show, Tremenheere Gallery and Sculpture Gardens, UK
2022 Fox is growing bio-materials to make sculpture as the research continues with probiotic bacterial and yeast cultures (Scoby), microbial cellulose; and mycelium. These materials bio-degrade naturally and are non-toxic to life and the environment
2020-22 Current projects include researching Kefir (organic probiotics) in relation to the health of the human gut. Kefir is understood to support the immune system. Fox is interested the healing of ‘Leaky Gut Syndrome’ (LGS) with plant-based diets and probiotic supplementation. LGS as an underlying problem is increasingly gaining support in relation to many preventable conditions and diseases. A keen fermenter Fox has been making Kefir and other cultured foods since 2010
